Atlantic Beach Pie

Serves 6-8. This is an adaptation of a recipe from Food52 that uses saltines.  Morsels are so much better.

Crust
1 package (6 oz) of Margot’s Morsels Simply Sea Salt or Crazy Crumbs in Salt
1/3 C. softened butter
1/4 C sugar
 
Filling
1 (14 oz.) can sweetened condensed milk
4 egg yolks
½ cup lemon or lime juice or, a combination of the two
Fresh whipped cream and fresh raspberries for garnish
 
Crush the morsels, but not to dust or, use the Salt flavored Crazy Crumbs. Add the sugar and knead in the butter by hand until the crumbs begin to hold together. Press into an 8-inch pie pan. Chill for 15 minutes, bake for 10 minutes covered with foil.
 
Beat the egg yolks into the milk, beat in the citrus juice.  It is important to completely combine these ingredients. Pour this mixture in the shell and make until the filling is firm, about 16 minutes.  This pie needs to be completely cold to be sliced.  Serve with whipped cream and fresh berries or just a sprinkling of sea salt.
