Dave's Spinach Squares with Margot's Morsels

Serves 6, as an appetizer portion. 

This is another customer's recipe for delicious spinach squares with the added crunch of Margot's Morsels crushed into crumbs and finished off with whole ones for a little extra umph.

  • 3 bags frozen chopped Spinach (approximately 36 oz)

  • 1 to 1.5 finely chopped onions (Vidalia are my preference)

  • 1.5 - 2 cups Margot's Morsels ground up or 3-4 cups just lightly chopped up. 

  • 6 eggs beaten (I use 2 eggs and then egg white equivalents for the other 4.  I have not noticed much taste difference using the egg whites)

  • 1.5 - 2.0 cups grated Parmigiano - Reggiano cheese

  • Salt, pepper, garlic powder, thyme to taste - start with 1 tsp of each and go from there

  • 3/4 - 1 cup melted butter (depends on how buttery you want it)

Optional

  • Feta cheese - any amount to suit your taste but remember the Feta can add some extra saltiness.

Microwave the spinach then squeeze all the water out of it using cheesecloth. 

Mix all the ingredients together saving the butter for last. Then add in the butter and mix it all up again.

Spread it about 3/4"1" deep in a Pyrex baking dish. I usually have enough for 1 long (9x13") and 1 square 
baking dish (8x8"). Spray the dishes bottom with cooking spraySpread the mixture without letting it touch the sides of the dish.
Bake at 350 degrees for about 30-35 minutes. 
I consider it done when I see the bottom edges and part of the side brown and slightly brown, respectively.  You can play with the amount of time - if you like it slightly wet reduce the time. If you want it extra crunching, break up additional Margot’s Morsels to top and press in. Cut into squares and serve as a side dish or appetizer.
