I tried these over the holidays for a spur-of-the-moment cocktail gathering, and they were a hit.
- Green Olives, pits removed (either already stuffed with cheese or without)
- Cheese, cut into small cubes (if your olives didn't come already stuffed with the cheese).
- Margot's Morsels Crazy Crumbs (Garlic Parmesan, Sea Salt)
- One egg whisked (more if you have a larger number of olives)
Now your creativity can take over. I found Feta-stuffed olives, but I've seen some stuffed with blue cheese. If they come empty, try a flavorful hard cheese.
Pat dry your olives. Set out 2 bowls:
- In the first whisk an egg for dipping your olives
- In the second place, Margot's Morsels Crazy Crumbs, in any flavor. I added a little rosemary and a little cayenne pepper, but regular ground pepper would be great.
Roll your olives in the egg wash, then coat them well with breadcrumbs. Place on a paper towel-covered cookie sheet and prepare a large pan for the saute with a hot neutral oil (avocado or olive)- about 1/4-1/2 inch in the pan.
I used a spider, but a spoon with holes or slots works well to lower your olives into the hot oil, turning until they are browned. Use your spider or spoon to remove them, then drain on paper towels. Serve them either warm or at room temperature with lemon wedges. Enjoy!
Tip: I had Margot's Morsels Crazy Crumbs in my pantry, but use the Margot's Morsels you have and whir them in a food processor or blender to make your own crumbs.
