Crispy Mashed Potato Cakes
I probably should have posted this right after the holidays, but it's still a great way to use leftover mashed potatoes. I used this recipe recently with leftover mashed potatoes, crushed Margot's Morsels Herb Stuffing, and made them as an appetiser-sized portion with just a dollop of sour cream and chives. I had extra Margot's Morsels Herb Stuffing in my freezer...did you know all the morsels freeze well? So good.
Faux Fried Pickle Dip
I admit this is a little off the wall, but if you have lived or traveled in the South, you may have been to a burger joint or diner that served fried pickles as a side. The lore goes that in the 1960s in Arkansas, Bernell "Fatman" Austin came up with the idea of dunking whole dill pickles in catfish batter and frying them. Lots of variations have evolved since.
